Super Soft Sugar Cookies
preheat oven to 300 degrees (yes 300- cooking them low is the key!)
makes about 3 dozen small cookies
NEED:
1 cup butter- softened
1 cup sugar
1 tsp baking powder
1/4 tsp salt
1 egg
1 tsp vanilla
2 1/4 cup flour
toppings:
sugar crystals, frosting, crushed candy cane, baby m&m's or whatever you want!
- beat butter in large bowl w/ electric mixer on Med to High speed for 30 seconds. Add sugar, baking poser and salt. Beat until well combined- scrapping sides of bowl occassionally.
- beat in egg and vanilla until combined. beat in as much flour as you can with mixer. Stir in rest by hand if needed.
(if dough is too soft refrigerate for 30-60 minutes)
s- shape dough into 1 inch balls or use a cookie dough scooper.
roll balls in sugar or top with your treat! My kids and I's favorite is the crushed peppermint candy cane.
-Place on cookie sheet 2 inches apart
- bake 15 minutes or until tops are SLIGHTLY cracked and sides are set(they will not look done) it may also take a bit longer. You do not want brown edges!
transfer immediately to a cooling rack.
