Black Bean & Sweet Potato Chili

I found a recipe for this chili and changed it a bit to make it my own.  I took a chance and made this for a family pot luck and it was a huge hit!
So many have been asking, so here it is!
The most delicious chili ever! And ridiculously healthy too!  Even the men in my family LOVED it!

Serves A LOT :) I am pretty sure this made about a gallon. Literally.  It freezes amazingly for quick meals too.

Ingredients Needed:
* 1 Tbs extra virgin olive oil
*1 medium onion- minced (or dehydrated if you prefer- about 1/2 cup)
*3 medium sized sweet potatos, cubed
*5 cloves garlic, or 2 Tbs minced garlic
*2.5 Tbs Chili Powder
*2 tsp Cumin
*3/4 tsp Paprika or Ground Chipotle Chili
*1/2 tsp salt
*3.5 cups low sodium stock or water
* 3 cups/cans diced tomatoes (I puree this for the kids sake)
3 cans black beans, rinsed and drained
* 3 tsp fresh lime juice
* 3 Tbs fresh chopped cilantro

Rinse black beans and cube sweet potatoes

Heat oil in a large sauce pan over medium heat.  Add onion, garlic and sweet potatoes.  Stir often until onion softens (about 4-5 minutes).
Add Garlic, chili powder, cumin, paprika and salt.

Stir constantly until fragrant(doesn't take long!) Add in the stock, bring to a simmer, cover and reduce heat to maintain a gentle simmer.

Add in tomatoes, and beans.
Now the fun part, I let this simmer on a lower temp, covered but with a tiny bit open for about an hour....
It really only needs about 30 minutes total simmer time from the time the potatoes are added.  But I prefer to let it marinade :)

Add in the lime and cilantro about 15 minutes before serving.

And there you have it! A super healthy, deliciously fragrant dinner with minimal effort!

2 cup serving=374 calories, 6g fat, 67g carbohydrates, 14g protein, 15g fiber, 699mg sodium, 603g potassium. 
Excellent source of vitamin A & C!
